Homemade Rhubarb Simple Syrup

- 1 cup water
- 1 cup white sugar
- 4 cups cut rhubarb
In a saucepan over high heat, bring the water to a boil.
1 cup water, 1 cup white sugar, 4 cups cut rhubarb
Add the white sugar and rhubarb.
Continue boiling until the sugar is dissolved and then simmer for 15 minutes.
Place a fine mesh strainer over a bowl or large measuring cup.
Pour the rhubarb mixture through the strainer.
Use the back of a spoon to press on the cooked rhubarb in the strainer to extract more syrup.
Discard the cooked rhubarb (or use it as a sundae topping)!
Pour the cooled Rhubarb Simple Syrup into a clean container and, once cooled, cover the bottle and refrigerate. Store the simple syrup in the refrigerator for up to one month.
